The history of La Ricaurte farm dates back to the 1940s when brothers Honorio and Julio Vélez inherited the estate from their father, Conrado Vélez. At that time, the Vélez brothers consciously began coffee cultivation, initially with Typica and Bourbon varieties. The farm has remained in the family's hands ever since, with younger generations now pioneering innovations in coffee production and fermentation processes.

The farm is located in Colombia, in the Antioquia region, near the town of Ciudad Bolívar, in the village of Farallones del Citará - El Retiro.

The farm covers an area of 35 hectares, with 25 hectares dedicated to growing specialty coffees. The plantation is situated at an altitude of 1,900 meters above sea level, providing optimal conditions for high-quality coffee production. Currently, the farm is home to more than 100,000 coffee trees, including varieties such as Caturra, Colombia, Castillo, and Tabi.

One of the farm's unique features is its use of modern fermentation techniques, where microorganisms and natural fruit pulps are utilized to develop distinctive flavor profiles.

Tropical Strawberry Honey Processing

The Tropical Strawberry Honey processing is an innovative method that enhances the coffee’s natural fruitiness and sweetness. The ripest coffee cherries are carefully hand-picked and then undergo a flotation process to remove defective beans. After this, the cherries are pulped, leaving the coffee beans in stainless steel tanks for an oxygen-free fermentation process.

The first fermentation lasts for 120 hours, during which the coffee is enriched with natural enzymes and microorganisms. This is followed by a second fermentation, where selected fruit concentrates and leachate (the coffee’s own juices extracted during the previous fermentation) are added to the process. This results in an even more intense and complex flavor profile.

At the end of the fermentation process, the coffee is sun-dried, further enhancing its fruity characteristics and concentrating the flavors. The result is a vibrant flavor profile filled with notes of strawberry and Haribo peach, complemented by the rich aroma of stone fruits and a long, balanced finish.
